Our favourite method for perfectly cooked beets!
Hello friends! Today we would like to share with you our tried-and-tested method for perfectly cooked beets using the InstantPot! This pressure cooker is treasured by many and if you’re reading this post, you probably have one on your counter top. Let’s put it to use!
An easy way to add more veggies to your diet
Cooked beets are wonderful to have on hand in your fridge. They can be easily incorporated into salads, dinner bowls, blended in smoothies and hummus, or simply marinated with balsamic vinegar, oil, salt, and pepper as a side dish. They add a touch of sweetness, an interested texture, and of course that gorgeous ruby hue to everything they touch (including your counter tops). After they are cooked and peeled, they they look like giant gemstones!
We added chopped beets to this simple salad pictured below featuring arugula, feta cheese, sunflower seeds, dried cranberries and served with balsamic vinaigrette. Great as a light lunch or on the side to freshen up a heavier meal.
Low in calories and a good source of fibre
Beets are an excellent low calorie food and perfect for those who are watching their diet. They are a good source of fibre and have a high water content. It’s easy to add beets to your diet since they are flavourful on their own without adding extra oil or seasonings.
We love using this method to cook beets because it means one less item to cook in our conventional oven. Our apartment is small, so using the oven causes it to warm up significantly. This becomes a huge problem during the summer months, as the oven will produce a lot of extra heat that stays trapped in the apartment as it comes up to temperature, cooks for 30-40 mins, and then cools down for another 30 mins. Using the InstantPot saves us hours of discomfort!
Instantpot accessories to simply the cooking process
For cooking beets in the InstantPot, I recommend to use the silicone steamer basket and steam rack accessories (pictured below) by the InstantPot brand. The steam rack allows your food to stay above the water as it cooks. The rack has long handles which help you to safely remove your food once done cooking. Don’t worry about peeling the beets before cooking, the skin becomes much easier to remove once the beets are cooked.

Easy InstantPot Beets
Equipment
- InstantPot
- Steamer Basket
- Steam Rack
- Vegetable peeler
Materials
- 4-5 fresh beets roughly the same size
- 3 cups water
Instructions
- Trim the greens off of the beets and thoroughly wash to remove all traces of soil. No need to peel before cooking, the skin will come off easily once cooked.
- Place steaming rack and steamer basket into instant pot and add beets on top.
- Add water to the InstantPot, making sure the water is not high enough to come in contact with the beets.
- Pressure cook on high for 30 mins. Quick release once finished cooking.
- Check to see if the beets are tender by inserting a toothpick into the middle. It should insert easily.
- Wait until the beets are cooled before removing the skin with a vegetable peeler.
- Chop up as desired and add to your favourite salads, smoothies, or enjoy as a side dish!
