Summer is starting to heat up here in Vancouver, and I have the perfect cocktail to complement these long days and warm nights. This pineapple mezcal sour cocktail is sweet, smoky, and a unique addition to your home cocktail repertoire. I made this one for a few of our friends and they loved it. I’m sure you will too!<\/p>\n\n\n\n

For this recipe, we use a mezcal by Siete Misterios Doba-Yej. This mezcal is available at our local BC Liquor Store so it is pretty easy to locate in our area. It’s a great option especially if you are only using mezcal for cocktails due to the comparatively affordable price and accessibility. <\/p>\n\n\n\n

Sour Cocktails<\/h3>\n\n\n\n

Like any ‘sour’ cocktail, this recipe includes 3 essential elements: spirit, lemon or lime juice, and sweetener. I always shake my sours with aquafaba to create a layer of fluffy foam on top to cut through the alcohol taste. My all-time favourite cocktail from the sour family is a cherry bourbon sour. I love trying new versions of sours with various base spirits. This pineapple mezcal sour is my current obsession for the summer months! <\/p>\n\n\n\n

Pineapple juice works seamlessly with almost any base alcohol. Tequila and pineapple goes down surprisingly easily for me. You can go the extra mile and opt for fresh-pressed pineapple juice for this recipe, but I find the boxed or canned varieties from Dole work great. Pineapple has a strong and recognizable flavour that is hard to overpower, even with alcohol. You really can’t go wrong with using pineapple juice in cocktails, so I recommend to have a box (or can) on hand in the pantry in case the mood strikes for experimentation. <\/p>\n\n\n\n
