Hello everyone! I wanted to share a refreshing treat with you to kick off patio season! This delicious Ginger Gin Fizz has everything you I love in a cocktail – a spicy kick from ginger beer, bittersweet orange, the tartness of lemon, and the familiar tang of pineapple juice. Combine these flavourful ingredients for a beautiful and light summery cocktail, perfect for enjoying on the patio.

I absolutely adore the taste of ginger beer. My first time having this bubbly, sticky, sweet beverage was mixed into Moscow mule at an Irish bar downtown. Not surprisingly, I was instantly hooked. I went back to that same bar a couple of times specifically to enjoy another Moscow mule, but each time they were out of ginger beer. Such a bummer, but at least the struggle pushed me into mix my own drinks instead like this Ginger Gin Fizz!

Making use of leftover cocktail ingredients in this Ginger Gin Fizz

We bought a box of pineapple juice to make our favourite vacation cocktail, the Singapore Sling. What that really means is we used an ounce or two and now have the rest of the box lingering in our fridge. Time to put it to use again in this recipe along with other bar essentials! The main spirit in this drink is gin, only an ounce which keeps the cocktail quite low in alcohol. For that beautiful bight orange colour, I used Aperol which surged in popularity last summer. I don’t think this bitter sweet orange apertif is going anywhere soon. It’s definitely worth having around in your liquor cabinet for this and many other summery sippers. I hope you enjoy shaking this one up accompanied by hot and sunny weather. Cheers!
